'Dum' cooking is a classic Indian technique by which a clay pot is covered sealed with a dough paste after part cooking the food, and placed inside or on low burning coals. The steam produced cooks the food, and the seal keeps all those gorgeous aromas and flavours in. The pot is traditionally broken at the table and the fragrance of the food that wafts out has to be experienced to be believed.

Unfortunately due to the lack of hot coals or a clay pot, I had to resort to that old fashioned Western technique in which I sealed a Le Creuset with foil and placed it in a low oven :-) It worked just as well, and I saved a clay pot somewhere in the world.'Michellehttps://www.blogger.com/profile/14329905866291793180noreply@blogger.comtag:blogger.com,1999:blog-1693082713303047231.post-57823641307955930932014-11-30T13:30:49.322-07:002014-11-30T13:30:49.322-07:00such a huge production effort ! that is the big pr...such a huge production effort ! that is the big problem with this type of ethnic food.
i really didn't get the end where you have to cook it in the oven ! exactly what is the added benefit except for over-bloating the process ! Here's a mod to the recipe - after it bakes in the oven then throw it in the crock pot and cook for another 10 hours until it turns in to pulled-mutton. The recipe here (on the page) says to heat the oven to 350F and to cook the goat for 20-25 minutes while the other says to heat it to 400C (which is not physically possible in any ordinary kitchen oven) and cook for 15-20.Adam J. Some of the stewing pieces had too much fat in it. The fat made the curry a little more oilier than I would have liked. But the leaner, meatier pieces were really good and very tender. So ideally I would have liked to use a few chops that were marbled with fat, and I would cut them into cubes myself. I'll probably do that the next time.Michellehttps://www.blogger.com/profile/14329905866291793180noreply@blogger.comtag:blogger.com,1999:blog-1693082713303047231.post-29315418818796851452012-01-16T23:01:01.674-07:002012-01-16T23:01:01.674-07:00greetings, yu mentioned that in hindsight even tho...greetings, yu mentioned that in hindsight even though the dish was amazing yu would use a different cut of goat, which did yu use and which should yu have used?Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-1693082713303047231.post-91494136065179559882012-01-16T19:17:07.745-07:002012-01-16T19:17:07.745-07:00Looks delicious. I quite understand that you'd use a Le Creuset pot with foil - so would I. But the idea of breaking a clay pot at the table is just so inviting. I'd probably injure myself doing it, though.Phil in the Kitchenhttps://www.blogger.com/profile/15904292856978631382noreply@blogger.comtag:blogger.com,1999:blog-1693082713303047231.post-74595167632188231012012-01-15T11:12:24.914-07:002012-01-15T11:12:24.914-07:00Lovely post & the Taar Korma looks fabulous Mi...Lovely post & the Taar Korma looks fabulous Mich!
